Apple Jelly Cake
A classic cake with apple jelly filling.
Ingredients
- 1 cupful Butter
- 2 cupfuls Granulated Sugar
- 4 Eggs
- 3 cupfuls All-Purpose Flour
- 1 1/2 teaspoonfuls Baking Powder
- 1 cupful Milk
- 6 Apples
- 6 ounces Granulated Sugar
- 1 teaspoonful Butter
- as needed Powdered Sugar
Instructions
- 1In a large bowl, cream together the butter and sugar until light and fluffy. Add the eggs, two at a time, beating for 10 minutes after each addition.
- 2In a separate bowl, sift together the flour and baking powder. Add the dry ingredients to the butter mixture alternately with the milk, mixing until just combined.
- 3Preheat oven to 350°F (175°C). Grease and flour jelly cake tins. Pour batter into prepared tins and bake for approximately 25-30 minutes, or until a toothpick inserted into the center comes out clean.
- 4While the cake is baking, peel and slice the apples. Place the apples and sugar in a saucepan and cook over medium heat until the apples are tender. Remove from heat and rub the mixture through a fine sieve. Stir in the butter.
- 5Let the cake layers and apple jelly filling cool completely. Spread the apple jelly filling between the cake layers. Cover the top of the cake with powdered sugar.
