Apple Jelly Cake

A classic cake with apple jelly filling.

Ingredients

  • 1 cupful Butter
  • 2 cupfuls Granulated Sugar
  • 4 Eggs
  • 3 cupfuls All-Purpose Flour
  • 1 1/2 teaspoonfuls Baking Powder
  • 1 cupful Milk
  • 6 Apples
  • 6 ounces Granulated Sugar
  • 1 teaspoonful Butter
  • as needed Powdered Sugar

Instructions

  1. 1In a large bowl, cream together the butter and sugar until light and fluffy. Add the eggs, two at a time, beating for 10 minutes after each addition.
  2. 2In a separate bowl, sift together the flour and baking powder. Add the dry ingredients to the butter mixture alternately with the milk, mixing until just combined.
  3. 3Preheat oven to 350°F (175°C). Grease and flour jelly cake tins. Pour batter into prepared tins and bake for approximately 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  4. 4While the cake is baking, peel and slice the apples. Place the apples and sugar in a saucepan and cook over medium heat until the apples are tender. Remove from heat and rub the mixture through a fine sieve. Stir in the butter.
  5. 5Let the cake layers and apple jelly filling cool completely. Spread the apple jelly filling between the cake layers. Cover the top of the cake with powdered sugar.
