Apple Butter Cake

A classic apple butter cake recipe from 1888, featuring a spiced cake layered with sweet apple butter and icing.

Ingredients

  • 2 cups Brown Sugar
  • 4 Eggs
  • 1 pint Flour (Approximately 2 cups)
  • 0.6666666666666666 cup Water (About 2/3 cup)
  • 1.5 teaspoon Royal Baking Powder
  • 1 tablespoon Royal Extract of Ginger
  • 1 teaspoon Royal Extract of Lemon
  • Sweet Apple Butter (As needed, for filling)
  • Icing (As needed, for topping)

Instructions

  1. 1In a large bowl, beat the eggs and brown sugar together for 10 minutes until light and fluffy.
  2. 2Add the water, then gradually add the flour sifted with the Royal Baking Powder, and the Royal Extract of Ginger and Royal Extract of Lemon. Mix until a smooth batter forms.
  3. 3Preheat oven to 350°F (175°C). Pour the batter into greased jelly tins (or a cake pan). Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  4. 4Once the cakes are cooled, lay them together with sweet apple butter between the layers. Ice the top of the cake.
