Apple Butter Cake
A classic apple butter cake recipe from 1888, featuring a spiced cake layered with sweet apple butter and icing.
Ingredients
- 2 cups Brown Sugar
- 4 Eggs
- 1 pint Flour (Approximately 2 cups)
- 0.6666666666666666 cup Water (About 2/3 cup)
- 1.5 teaspoon Royal Baking Powder
- 1 tablespoon Royal Extract of Ginger
- 1 teaspoon Royal Extract of Lemon
- Sweet Apple Butter (As needed, for filling)
- Icing (As needed, for topping)
Instructions
- 1In a large bowl, beat the eggs and brown sugar together for 10 minutes until light and fluffy.
- 2Add the water, then gradually add the flour sifted with the Royal Baking Powder, and the Royal Extract of Ginger and Royal Extract of Lemon. Mix until a smooth batter forms.
- 3Preheat oven to 350°F (175°C). Pour the batter into greased jelly tins (or a cake pan). Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
- 4Once the cakes are cooled, lay them together with sweet apple butter between the layers. Ice the top of the cake.
