Anchovy Toast
A savory toast recipe featuring anchovies and a creamy custard.
Ingredients
- 4 rolls Lunch rolls
- as needed Butter
- 6 Anchovies
- 1/2 pint Heavy cream
- 3 Egg yolks
- as needed Salt
Instructions
- 1Remove the tops and bottoms from the lunch rolls. Slice each roll in half horizontally. Toast the slices and butter them.
- 2Wash the anchovies and remove any bones. Chop the anchovies very finely.
- 3Spread the chopped anchovies on 4 of the toast slices. Cover with the remaining toast slices. Arrange the sandwiches on a serving dish.
- 4In a small heat-safe bowl, combine the heavy cream and a pinch of salt. Place the bowl over a saucepan of simmering water (a double boiler). Bring the cream to a simmer. In a separate bowl, whisk the egg yolks with a little cream. Once the cream is simmering, slowly whisk in the egg yolk mixture. Continue to cook, stirring constantly, until the custard thickens slightly. Do not boil. Pour the custard over the assembled toast.
