ZABAIONE

ZABAIONE

A classic Italian dessert made with wine, eggs, and sugar, cooked until thickened into a frothy cream.

Ingredients

  • 1/4 cup Marsala wine (Original ingredient is Marsala or Madeira wine.)
  • 1 tablespoon Granulated sugar
  • 2 large Eggs
  • 1/4 teaspoon Ground cinnamon (Optional)

Instructions

  1. 1In a heatproof bowl (or the top of a double boiler), whisk together the eggs and sugar until well combined.
  2. 2Place the bowl over a double boiler (or set the bowl over a pot of simmering water, ensuring the bottom of the bowl doesn't touch the water). Add the Marsala wine to the egg mixture. Cook, whisking constantly, until the mixture begins to thicken and becomes frothy, about 10-15 minutes. Be careful not to overcook, as it can curdle. The mixture should coat the back of a spoon.
  3. 3Remove from heat and continue whisking for a moment to prevent overcooking. Serve immediately, hot, in tall glasses or over sponge cake. If desired, sprinkle with a pinch of cinnamon.
