WHITE SAUCE FOR BOILED ASPARAGUS OR CAULIFLOWER (Salsa Bianca)
A simple white sauce, perfect for boiled vegetables.
Ingredients
- 1 tablespoon Flour
- 1/4 cup Butter
- 1 tablespoon Vinegar
- 1/2 teaspoon Salt (Quantity estimated (not specified in original recipe))

- 1/2 cup Water or soup stock
- 1 each Egg yolk
Instructions
- 1Melt half of the butter in a saucepan over medium heat. Add the flour and cook, stirring constantly, until it begins to brown, about 2-3 minutes.
- 2Slowly add the water or soup stock to the roux, stirring constantly to prevent lumps. Stir in the vinegar and the remaining butter. Remove from the heat and add the beaten egg yolk. Stir until smooth. Season with salt and pepper to taste. The sauce should be smooth like a thin custard.
