Ingredients

  • 7 or 8 Tomatoes

Instructions

  1. 1Finely chop the onion, garlic, and celery. Roughly chop the bay leaves and parsley.
  2. 2In a saucepan, heat the olive oil over medium heat. Add the chopped onion, garlic, celery, bay leaves, and parsley. Season with salt and pepper. Sauté for 5 minutes, or until the vegetables soften.
  3. 3Add the chopped tomatoes to the saucepan. Stir well. Bring to a simmer, then reduce the heat to low and cook for 30 minutes, stirring occasionally, until the sauce has thickened.
  4. 4Strain the sauce through a sieve to remove any solids. The sauce is now ready to use.
