TOMATO SAUCE (Salsa di Pomidoro)

Ingredients

- 1 clove Garlic

- 4 leaves Bay leaves (Quantity estimated (not specified in original recipe))
- 1 tablespoon Fresh parsley (Quantity estimated (not specified in original recipe))
- 1 tablespoon Olive oil (Quantity estimated (not specified in original recipe))

- 7 or 8 Tomatoes
Instructions
- 1Finely chop the onion, garlic, and celery. Roughly chop the bay leaves and parsley.
- 2In a saucepan, heat the olive oil over medium heat. Add the chopped onion, garlic, celery, bay leaves, and parsley. Season with salt and pepper. Sauté for 5 minutes, or until the vegetables soften.
- 3Add the chopped tomatoes to the saucepan. Stir well. Bring to a simmer, then reduce the heat to low and cook for 30 minutes, stirring occasionally, until the sauce has thickened.
- 4Strain the sauce through a sieve to remove any solids. The sauce is now ready to use.
