STRING BEANS WITH EGG SAUCE Fagiuolini in Salsa d'Uovo
A classic Italian dish featuring string beans in a creamy egg sauce.
Ingredients
- 1 lb Green beans (or wax beans)
- 1 teaspoon Cornstarch

- 1/4 of a lemon Lemon juice
- 1 each Egg yolk
- 3/4 cup Chicken or vegetable stock
Instructions
- 1String the green beans. Bring a pot of salted water to a boil. Add the beans and parboil them for about 5 minutes, or until tender-crisp. Drain the beans and cut them into inch-long pieces.
- 2In a pan, melt some butter over medium heat. Add the cooked beans, salt, and pepper. Toss to coat and season to taste.
- 3In a saucepan, whisk the egg yolk. Whisk in the cornstarch and lemon juice. Gradually add the stock, whisking constantly. Cook over medium-low heat, stirring constantly, until the sauce thickens slightly. Do not boil.
- 4Pour the egg sauce over the hot beans. Gently stir to combine. Let it sit for a moment to allow the flavors to meld, but do not overcook, or the egg will curdle. Serve immediately.
