PIQUANT SAUCE (Salsa Piccante)

A flavorful sauce made with anchovies, parsley, onion, garlic, lemon juice, vinegar, and olive oil.

Ingredients

  • 2 pieces Anchovies, canned in oil
  • 1 bunch Fresh parsley
  • 1/4 piece Small onion
  • 1 clove Garlic
  • 1 tablespoon Lemon juice
  • 1 tablespoon White wine vinegar
  • 1/4 cup Olive oil
  • 1/4 teaspoon Salt (Quantity estimated (not specified in original recipe))
  • 1/4 teaspoon Black pepper (Quantity estimated (not specified in original recipe))
  • Capers (optional) (Optional ingredient.)

Instructions

  1. 1Wash, skin, and bone the anchovies.
  2. 2Chop the parsley very fine with the onion.
  3. 3Rub a bowl with the cut side of a clove of garlic.
  4. 4Put in the anchovies and rub to a paste. Add the parsley and onion, a tablespoon each of lemon juice and vinegar, 1/4 cup olive oil and salt and pepper to taste. Stir the mixture until it is smooth and thick. Capers may be added by way of variety. This is delicious as a sauce for plain boiled meat or fish.
