NUT CAKE

Ingredients

  • 1/4 lb Rice flour
  • 6 oz Granulated sugar
  • 4 oz Butter
  • 4 Eggs

Instructions

  1. 1Blanch the almonds and filberts. Dry them thoroughly. Grind them very fine.
  2. 2Mix the ground nuts with the rice flour and 2 tablespoons of the sugar.
  3. 3Beat the eggs until light. Beat in the remaining sugar and vanilla extract.
  4. 4Pour the egg mixture into the dry ingredients and beat until light. Add the melted butter and continue to beat.
  5. 5Preheat oven to 350°F (175°C). Pour the batter into a buttered loaf-cake tin and bake for 30 minutes, or until a toothpick inserted into the center comes out clean.
