Ingredients

Instructions

  1. 1Place the flour on a clean work surface or bread board. Make a well in the center. Crack the egg into the well. Add the salt. If using, add a little water. Use a fork to gently whisk the egg and water, gradually incorporating the flour from the sides of the well until a shaggy dough forms. Use any extra egg whites on hand.
  2. 2Knead the dough thoroughly on a lightly floured surface, adding more flour if necessary, until it becomes smooth and elastic. This should take about 5-7 minutes.
  3. 3Roll the dough out as thinly as possible, about the thickness of a dime. If the sheet of pasta is too large to handle with an ordinary rolling pin, a broom handle which has been sawed off, scrubbed and sand papered, will serve in lieu of the long Italian rolling pin.
  4. 4Cut the pasta into desired shapes, such as tagliatelle (ribbons), squares, or circles. Cook the pasta in boiling, salted water until al dente, about 2-4 minutes, depending on the thickness.
