NOODLES OR HOME MADE PASTE Tagliatelli o Pasta Fatta in Casa
A recipe for homemade pasta, suitable for beginners.
Ingredients
- 1 cup All-purpose flour (Quantity estimated (not specified in original recipe))
- 1 each Large egg
- 1/2 teaspoon Salt (Quantity estimated (not specified in original recipe))
- 1/4 cup Water (Quantity estimated (not specified in original recipe))
Instructions
- 1Place the flour on a clean work surface or bread board. Make a well in the center. Crack the egg into the well. Add the salt. If using, add a little water. Use a fork to gently whisk the egg and water, gradually incorporating the flour from the sides of the well until a shaggy dough forms. Use any extra egg whites on hand.
- 2Knead the dough thoroughly on a lightly floured surface, adding more flour if necessary, until it becomes smooth and elastic. This should take about 5-7 minutes.
- 3Roll the dough out as thinly as possible, about the thickness of a dime. If the sheet of pasta is too large to handle with an ordinary rolling pin, a broom handle which has been sawed off, scrubbed and sand papered, will serve in lieu of the long Italian rolling pin.
- 4Cut the pasta into desired shapes, such as tagliatelle (ribbons), squares, or circles. Cook the pasta in boiling, salted water until al dente, about 2-4 minutes, depending on the thickness.
