MOULD OF PEAS OR BEANS Sformato di Fagiuolini o Piselli

A savory custard made with green beans or peas, onion, parsley, celery, and cheese.

Ingredients

  • 1 lb Green beans (or wax beans or peas)
  • 1 tablespoon All-purpose flour
  • 1/4 Onion (Quantity estimated (not specified in original recipe))
  • 1 cup Whole milk
  • 1 sprig Fresh parsley
  • 3 Large eggs
  • 1 piece Celery
  • 3 tablespoons Grated cheese (Parmesan or similar) (Quantity estimated (not specified in original recipe))
  • 2 tablespoons Olive oil (or butter)
  • 1/4 cup Water (Quantity estimated (not specified in original recipe))
  • 1/2 teaspoon Salt (Quantity estimated (not specified in original recipe))
  • 1/4 teaspoon Black pepper (Quantity estimated (not specified in original recipe))
  • 1 tablespoon Butter (For greasing, quantity estimated (not specified in original recipe))

Instructions

  1. 1String the green beans. Bring a pot of water to a boil. Add the beans and blanch them for 2-3 minutes, until they turn bright green. Drain the beans and immediately plunge them into cold water to stop the cooking process.
  2. 2Finely chop the onion, parsley, and celery. Heat 1 tablespoon of olive oil (or butter) in a skillet over medium heat. Add the chopped onion, parsley, and celery and cook until the onion is golden, about 5-7 minutes.
  3. 3Add the blanched beans to the skillet with the onion mixture. Stir to combine. Add just enough water (about 1/4 cup) to prevent burning and let the beans simmer until tender, about 5-7 minutes. Season with salt and pepper to taste.
  4. 4In a small saucepan, whisk together the milk and flour. Heat over medium heat, stirring constantly, until the sauce thickens slightly, about 3-5 minutes. Remove from heat.
  5. 5Beat the eggs in a separate bowl. Let the beans and white sauce cool slightly. Add the eggs, cooked beans, and 3 tablespoons of grated cheese to the white sauce. Stir to combine. Butter a mould or baking dish. Pour the mixture into the prepared dish. Bake in a preheated oven at 350°F (175°C) for 20-25 minutes, or until the custard is set and firm. Alternatively, steam the mixture until firm. Serve hot.
