MEAT OMELETTE (Polpettone)
A savory meat omelette made from leftover boiled meat, breadcrumbs, and egg, pan-fried and served with a simple gravy.
Ingredients
- 2 cups Cold boiled meat (Quantity estimated (not specified in original recipe))
- 1 large Egg
- 1/2 cup Bread crumbs
- 2 tablespoons Butter
- 1/4 cup Hot water (Quantity estimated (not specified in original recipe))
- 1 large Egg (For gravy)
- 1/2 teaspoon Lemon juice (Quantity estimated (not specified in original recipe))
Instructions
- 1Chop or grind the cold boiled meat. In a bowl, mix the chopped meat with a slightly beaten egg and bread crumbs that have been soaked in hot water. Season with 1 tablespoon of melted butter. Mix until the ingredients hold their shape.
- 2Melt 1 tablespoon of butter in a frying pan over medium heat. Form the meat mixture into an oval cake. Sauté on one side for about 8-10 minutes, until browned. Carefully flip the omelette using a plate or cover to avoid breaking it. Sauté on the other side for another 8-10 minutes, until browned.
- 3Remove the omelette from the pan. In the same pan, using the remaining fat, make a gravy. Add a beaten egg and a dash of lemon juice just as it is taken from the fire. Pour the gravy over the omelette before serving.
