GNOCCHI OF FARINA OR CORNMEAL Gnocchi alla Romana

Ingredients
- 1 pint Milk
- 1/2 pint Water
- 1/2 cup Farina or Cornmeal
- 1 Egg

Instructions
- 1In a saucepan, combine the milk and water (if using). Bring the mixture to a boil over medium heat. Add salt.
- 2Gradually add the farina or cornmeal to the boiling milk mixture, stirring constantly with a whisk to prevent lumps. Continue stirring until the mixture thickens.
- 3Remove the pot from the heat. Stir in 1 tablespoon of butter, several tablespoons of grated cheese, and the egg (slightly beaten). Mix well. Spread the mixture onto a lightly buttered baking sheet or a moulding board in a sheet about 3/4 inch thick. Let it cool completely.
- 4Once the gnocchi is cold, cut it into squares or diamond shapes. Butter a shallow baking dish or platter. Place a layer of gnocchi in the dish, sprinkle with cheese and dot with butter. Make another layer and repeat until the dish is filled. Bake in a preheated oven at 375°F (190°C) until the crust is well browned, about 20-25 minutes.
