FRIED CELERY Sedano Fritto
A simple recipe for fried celery.
Ingredients
- 8 stalks Celery stalks
- 4 cups Water (Quantity estimated (not specified in original recipe))
- 1/2 cup All-purpose flour (Quantity estimated (not specified in original recipe))
- 4 tablespoons Butter (or vegetable oil) (Originally butter, vegetable oil or drippings. Substituted with butter for modern preference. Can also use vegetable oil for similar texture.)

Instructions
- 1Cut the outside stalks of celery into pieces 3 to 4 inches long, and strip off the coarsest fibers.
- 2Cook the celery pieces in water until soft and transparent. Drain in a colander.
- 3When the celery is as dry as possible, roll each piece separately in flour.
- 4Sauté the floured celery pieces separately, not in a mass, in butter, vegetable oil or drippings, with salt and pepper. Each piece must be turned to cook on both sides.
