BOLOGNESE SAUCE FOR MACARONI (Maccheroni alla Bolognese)

BOLOGNESE SAUCE FOR MACARONI (Maccheroni alla Bolognese)

A classic Bolognese sauce recipe, adapted for modern kitchens.

Ingredients

  • 1/4 lb Ground round steak
  • 2 oz Bacon (Originally salt pork or bacon.)
  • 1 tablespoon Butter (Or substitute with olive oil.)
  • 1 pint Hot water or broth
  • 1 small Carrot
  • 1/4 Onion
  • 1 large piece Celery
  • 1/2 tablespoon Flour
  • 1/4 teaspoon Pepper (Quantity estimated (not specified in original recipe))
  • 1/8 teaspoon Nutmeg (Optional)
  • 1/2 cup Dried mushrooms (Optional, soaked and chopped.)

Instructions

  1. 1Finely chop the raw round steak, bacon, carrot, onion, and celery.
  2. 2In a saucepan or pot, melt the butter over medium heat. Add the chopped meat and vegetables. Cook, stirring occasionally, until the meat is browned, about 5-7 minutes.
  3. 3Stir in the flour. Cook for 1 minute, stirring constantly. Gradually add the hot water or broth, stirring to prevent lumps. If using dried mushrooms, add them now.
  4. 4Reduce the heat to low, cover, and let the sauce simmer for 30-60 minutes, or until it reaches the consistency of a thick gravy. Stir occasionally. Season with pepper and nutmeg, if desired.
