BOLOGNESE SAUCE FOR MACARONI (Maccheroni alla Bolognese)
A classic Bolognese sauce recipe, adapted for modern kitchens.
Ingredients
- 1/4 lb Ground round steak
- 2 oz Bacon (Originally salt pork or bacon.)
- 1 tablespoon Butter (Or substitute with olive oil.)
- 1 pint Hot water or broth
- 1 small Carrot
- 1/4 Onion
- 1 large piece Celery
- 1/2 tablespoon Flour
- 1/4 teaspoon Pepper (Quantity estimated (not specified in original recipe))
- 1/8 teaspoon Nutmeg (Optional)
- 1/2 cup Dried mushrooms (Optional, soaked and chopped.)
Instructions
- 1Finely chop the raw round steak, bacon, carrot, onion, and celery.
- 2In a saucepan or pot, melt the butter over medium heat. Add the chopped meat and vegetables. Cook, stirring occasionally, until the meat is browned, about 5-7 minutes.
- 3Stir in the flour. Cook for 1 minute, stirring constantly. Gradually add the hot water or broth, stirring to prevent lumps. If using dried mushrooms, add them now.
- 4Reduce the heat to low, cover, and let the sauce simmer for 30-60 minutes, or until it reaches the consistency of a thick gravy. Stir occasionally. Season with pepper and nutmeg, if desired.
