A simple Italian recipe for boiled cauliflower in a tomato-based sauce.

Ingredients

  • 1 small strip Salt pork (Quantity estimated (not specified in original recipe))
  • 2 tablespoons Tomato paste (Quantity estimated (not specified in original recipe))
  • 1/4 medium Onion
  • 1/2 teaspoon Salt (Quantity estimated (not specified in original recipe))
  • 1/4 teaspoon Black pepper (Quantity estimated (not specified in original recipe))
  • 1/4 teaspoon Allspice (Quantity estimated (not specified in original recipe))
  • 1 tablespoon Butter or oil
  • 1/4 cup Sausage meat (Quantity estimated (not specified in original recipe))
  • 1 large head Cauliflower
  • 2 tablespoons Grated cheese (Quantity estimated (not specified in original recipe))
  • 1 cup Water (Quantity estimated (not specified in original recipe))

Instructions

  1. 1Finely chop the onion and salt pork. In a saucepan, brown the salt pork and onion together. Add the butter or oil and spices. Add the tomato paste and enough boiling water to moisten the mixture thoroughly, and let it boil for a few minutes. Then add the finely chopped sausage and more water as necessary to keep it boiling.
  2. 2Wash and quarter the cauliflower. Cook it for ten minutes in boiling, slightly salted water. Drain it and add it to the sauce, and simmer slowly until tender. Be careful not to cook it so long that it gets mushy.
  3. 3Grated cheese may be sprinkled over it before serving.
