BIGNÉ

Ingredients
- 1 cup Flour
- 1 cup Water
- 1/2 cup Butter
- 3 eggs Eggs

Instructions
- 1In a saucepan, bring the water to a boil. Add the butter and salt. Stir until the butter is melted. Add the flour and cook, stirring constantly, until the mixture forms a ball and pulls away from the sides of the pan. This should take about 2-3 minutes.
- 2Remove the dough from the heat and let it cool slightly. Add the eggs one at a time, beating well after each addition until the dough is smooth and glossy.
- 3Preheat oven to 400°F (200°C). Drop spoonfuls of the dough onto a baking sheet lined with parchment paper, forming 12 Bigné (little cakes or cookies). Bake for 25-30 minutes, or until puffed up and golden brown.
- 4Once the Bigné are cool, split them open. Fill with custard flavored with vanilla and sprinkle with powdered sugar.
