A comforting Bengali rice and lentil porridge (khechuri) enriched with golden-browned cauliflower pieces and optionally soaked whole grams, offering a hearty and fragrant one-pot meal. This version follows the same base method as Golapi-khechuri with cauliflower replacing or accompanying the onions.

Ingredients

  • 1 cup Rice (As used in Golapi-khechuri base recipe)
  • 0.5 cup Lentils (As used in Golapi-khechuri base recipe)
  • 2 tablespoons Ghee (As used in Golapi-khechuri base recipe; for cooking and browning)
  • 2 medium Onions (As used in Golapi-khechuri base recipe; optional — may be replaced by cauliflower or used alongside it)
  • 1 quantity Spices (As used in Golapi-khechuri base recipe; exact types and amounts as referenced in the original Golapi-khechuri recipe)
  • 1 to taste Salt (As used in Golapi-khechuri base recipe)
  • 1 sufficient quantity Water (As used in Golapi-khechuri base recipe; also used for soaking grams)
  • 1 head Cauliflower (Cut into medium pieces; browned in ghee before adding to khechuri)
  • 0.5 cup Entire grams (Optional; whole dried grams — soak in water for a few hours, then brown before adding)

Instructions

  1. 1If using entire grams, place them in a bowl and cover completely with water. Leave them to soak for a few hours (at least 3–4 hours, or overnight) until they have softened slightly. Once soaked, drain the water and set the grams aside. Skip this step if not using grams.
  2. 2Prepare the khechuri exactly as you would for Golapi-khechuri: wash the rice and lentils together and set aside. Heat ghee in a heavy-bottomed pot over medium heat. Add the spices as specified in the Golapi-khechuri recipe and allow them to sizzle for a moment. Add the washed rice and lentils to the pot and stir to coat them in the ghee and spices. Add sufficient water and salt, stir well, and bring to a gentle boil. Reduce the heat, cover, and cook until the rice and lentils are soft and have come together into a thick, porridge-like consistency. Stir occasionally to prevent sticking.
  3. 3While the khechuri is cooking, cut the cauliflower into medium-sized florets or pieces of roughly equal size so they cook evenly. Heat a little ghee in a separate pan over medium-high heat. Add the cauliflower pieces in a single layer and cook, turning occasionally, until they are golden brown on the outside. This should take about 8–10 minutes. Remove from the pan and set aside.
  4. 4If using entire grams, drain the soaked grams thoroughly and pat them dry with a cloth. Using the same pan used for the cauliflower, heat a little ghee over medium-high heat and add the drained grams. Stir and cook until the grams are golden brown and slightly crisp on the outside, around 8–10 minutes. Remove from the heat and set aside. Skip this step if not using grams.
  5. 5Once the khechuri base is nearly done and the cauliflower (and grams, if using) are browned, add the browned cauliflower pieces to the khechuri in place of the onions, or alongside the onions if you are using both. Add the browned grams at the same time if using them. Gently stir to combine everything. Allow the khechuri to cook for a few more minutes so the cauliflower and grams are heated through and their flavours meld into the dish. Taste and adjust salt if needed, then serve hot.
