Water Fruit Ices
A refreshing frozen dessert made with fruit juice and syrup. Customize with your favorite fruits like berries, pineapple, or stone fruits.
Ingredients
- 1 cup Fruit Juice (currant, strawberry, raspberry, etc.) (Choose your favorite fruit juice.)
- 1 cup Granulated Sugar
- 1 cup Water
- 1 tablespoon Lemon Juice (optional) (Adds a touch of tartness.)
- 1 tablespoon Noyeau Liqueur (optional) (For cherry or greengage ice. Adds almond flavor.)
- 0.5 cup Fresh Fruit (pineapple, cherries, greengages, etc.) (Grated, pounded, or bruised, depending on the fruit.)
Instructions
- 1In a saucepan, combine the sugar and water. Heat over medium heat, stirring constantly, until the sugar is completely dissolved. Bring to a simmer and cook for 2-3 minutes. Remove from heat and let cool completely.
- 2In a bowl, mix the cooled syrup with the fruit juice. If using, add the lemon juice and/or noyeau liqueur. If using fresh fruit, add it to the mixture.
- 3Pour the mixture into an ice cream maker and freeze according to the manufacturer's instructions. Alternatively, pour the mixture into a shallow container and place in the freezer. Every 30 minutes, stir the mixture with a fork to break up ice crystals. Repeat this process for 3-4 hours, or until the ice is frozen to your desired consistency.
- 4Scoop the ice into glasses or bowls and serve immediately.
