Tomato Sandwiches
A refreshing and simple tomato sandwich, perfect for a light meal or snack.
Ingredients
- 2 medium Ripe red tomatoes (Choose very ripe tomatoes for the best flavor.)
- 4 slices Bread (Use your favorite type of bread.)
- 2 tablespoons Butter (Softened.)
- 1 teaspoon Mustard (Yellow or Dijon mustard.)
- 1 tablespoon Cress (Or other sprouts, finely chopped.)
- 1 tablespoon Olive oil (Extra virgin olive oil.)
- 0.25 teaspoon Black pepper (Freshly ground.)
- 0.25 teaspoon Salt (To taste.)
- 0.25 cup Fresh parsley (For garnish (optional).)
Instructions
- 1Cut the tomatoes into thin slices, cutting parallel with the core to avoid the core dropping out.
- 2Butter the bread slices. Spread mustard on the buttered slices and sprinkle with cress.
- 3In a small bowl, mix together the olive oil, pepper, and salt.
- 4Dip the tomato slices into the dressing. Place the dressed tomato slices between the bread-and-butter slices.
- 5Cut the sandwiches into squares or triangles with a sharp knife. Garnish with fresh parsley, if desired. For an extra refreshing touch, chill in the refrigerator for 30 minutes before serving.
