Tomato Pie

A simple tomato pie made with a potato base and tomato conserve.

Ingredients

  • 1.5 pounds Potatoes (For the potato pie base)
  • 4 tablespoons Butter (For the potato pie base)
  • 0.5 cup Milk (For the potato pie base)
  • 0.5 teaspoon Salt (For the potato pie base)
  • 0.25 teaspoon Black Pepper (For the potato pie base)
  • 1 cup Tomato Conserve (Or tomato sauce)
  • 1 package Pie Crust (Store-bought or homemade)

Instructions

  1. 1Peel the potatoes and cut them into evenly sized pieces.
  2. 2Place the potatoes in a pot, cover with water, and bring to a boil. Cook until tender, about 15-20 minutes.
  3. 3Drain the potatoes and return them to the pot. Add butter, milk, salt, and pepper. Mash until smooth.
  4. 4Preheat oven to 375°F (190°C). Line a pie dish with the mashed potatoes, creating a crust. Spread the tomato conserve evenly over the potato base.
  5. 5Cover the pie with the pie crust. Cut slits in the top of the crust to allow steam to escape. Bake for 30-40 minutes, or until the crust is golden brown.
  6. 6Let the pie cool slightly before serving.
