Tomato Pie
A simple tomato pie made with a potato base and tomato conserve.
Ingredients
- 1.5 pounds Potatoes (For the potato pie base)
- 4 tablespoons Butter (For the potato pie base)
- 0.5 cup Milk (For the potato pie base)
- 0.5 teaspoon Salt (For the potato pie base)
- 0.25 teaspoon Black Pepper (For the potato pie base)
- 1 cup Tomato Conserve (Or tomato sauce)
- 1 package Pie Crust (Store-bought or homemade)
Instructions
- 1Peel the potatoes and cut them into evenly sized pieces.
- 2Place the potatoes in a pot, cover with water, and bring to a boil. Cook until tender, about 15-20 minutes.
- 3Drain the potatoes and return them to the pot. Add butter, milk, salt, and pepper. Mash until smooth.
- 4Preheat oven to 375°F (190°C). Line a pie dish with the mashed potatoes, creating a crust. Spread the tomato conserve evenly over the potato base.
- 5Cover the pie with the pie crust. Cut slits in the top of the crust to allow steam to escape. Bake for 30-40 minutes, or until the crust is golden brown.
- 6Let the pie cool slightly before serving.
