Stewed Tomatoes
A simple and flavorful way to prepare tomatoes, inspired by Spanish and Portuguese cuisine. This recipe uses a gentle steaming method to bring out the natural sweetness of the tomatoes, enhanced with onion and optional garlic.
Ingredients
- 3 medium Tomatoes (About half a dozen good-sized tomatoes, halved or quartered)
- 0.5 medium Onion (About the same size as the tomatoes, finely chopped)
- 1 teaspoon Butter (For moistening the pan)
- 1 tablespoon Water (To create steam)
- 1 clove Garlic (Optional, finely chopped)
- 0.25 teaspoon Salt (To taste)
- 0.125 teaspoon Black Pepper (To taste)
Instructions
- 1Chop the tomatoes into halves or quarters. Finely chop the onion and garlic (if using).
- 2Moisten the bottom of a stew-pan with butter. Sprinkle the chopped onion (and garlic, if using) over the bottom of the pan. Add the chopped tomatoes and water. Season with salt and pepper. Place the lid on the stew-pan, ensuring it fits tightly. If necessary, place a weight on the lid (like a small pot filled with water) to ensure a tight seal.
- 3Place the stew-pan on the stove over low heat. Let the tomatoes steam until they are tender, about 20 minutes. Check occasionally to ensure there is still some liquid in the pan; add a little more water if necessary.
