Stewed Peas
A simple recipe to soften and enhance the flavor of older, tougher peas by stewing them with butter, seasonings, and optional additions like young onions and lettuce.
Ingredients
- 2 cups Peas (Use older, tougher peas for this recipe.)
- 4 cups Water (For boiling the peas)
- 2 tablespoons Butter (Unsalted)
- 0.5 teaspoon Salt (Or to taste)
- 0.25 teaspoon Black pepper (Freshly ground, or to taste)
- 2 small Young onions (optional) (Chopped)
- 0.25 head Lettuce (optional) (Shredded)
Instructions
- 1Bring 4 cups of water to a boil in a saucepan. Add the peas and boil for 30 minutes, or until they are tender.
- 2Drain the peas thoroughly using a strainer or colander.
- 3Melt the butter in a stew-pan or large skillet over medium heat. Add the drained peas, salt, and pepper. If using, add the chopped young onions and shredded lettuce. Stir well to combine.
- 4Reduce the heat to low, cover the pan, and simmer for 5 minutes, stirring occasionally, until the flavors have melded. Serve hot.
