Stewed Peas

A simple recipe to soften and enhance the flavor of older, tougher peas by stewing them with butter, seasonings, and optional additions like young onions and lettuce.

Ingredients

  • 2 cups Peas (Use older, tougher peas for this recipe.)
  • 4 cups Water (For boiling the peas)
  • 2 tablespoons Butter (Unsalted)
  • 0.5 teaspoon Salt (Or to taste)
  • 0.25 teaspoon Black pepper (Freshly ground, or to taste)
  • 2 small Young onions (optional) (Chopped)
  • 0.25 head Lettuce (optional) (Shredded)

Instructions

  1. 1Bring 4 cups of water to a boil in a saucepan. Add the peas and boil for 30 minutes, or until they are tender.
  2. 2Drain the peas thoroughly using a strainer or colander.
  3. 3Melt the butter in a stew-pan or large skillet over medium heat. Add the drained peas, salt, and pepper. If using, add the chopped young onions and shredded lettuce. Stir well to combine.
  4. 4Reduce the heat to low, cover the pan, and simmer for 5 minutes, stirring occasionally, until the flavors have melded. Serve hot.
