Stewed Lettuce with Peas
A simple and elegant side dish featuring tender stewed lettuce and sweet green peas.
Ingredients
- 1 head Lettuce, such as butter lettuce or romaine (Choose a tender variety)
- 1 cup Fresh or frozen green peas (If using frozen, thaw slightly)
- 2 tablespoons Butter
- 0.5 medium Onion, finely chopped
- 0.5 cup Vegetable broth
- 0.25 teaspoon Salt (Or to taste)
- 0.125 teaspoon Black pepper (Or to taste)
- 0.5 teaspoon Sugar (Optional, to enhance sweetness)
Instructions
- 1Wash the lettuce thoroughly. Remove any damaged outer leaves. Chop the lettuce into bite-sized pieces.
- 2In a medium saucepan, melt the butter over medium heat. Add the chopped onion and sauté until softened and translucent, about 5 minutes.
- 3Add the chopped lettuce to the saucepan. Pour in the vegetable broth. Season with salt, pepper, and sugar (if using). Bring to a simmer, then reduce heat to low, cover, and cook for 10 minutes, or until the lettuce is tender.
- 4Stir in the green peas. Cook for another 3-5 minutes, or until the peas are heated through and tender.
- 5Serve the stewed lettuce and peas hot as a side dish.
