Stewed Green Peas (French Style)
A simple and elegant way to cook green peas, stewed gently in butter for a naturally sweet and flavorful side dish.
Ingredients
- 2 cups Fresh or Frozen Peas (If using fresh, shell them first.)
- 2 tablespoons Butter (Unsalted)
- 1 teaspoon Granulated Sugar (Optional, especially for older peas)
- 0.25 teaspoon Salt (To taste)
- 0.125 teaspoon Black Pepper (Freshly ground, to taste)
Instructions
- 1If using fresh peas, shell them. If using frozen peas, no preparation is needed.
- 2In a medium saucepan or stew-pan, melt the butter over low heat. Add the peas, salt, and pepper. Stir to coat the peas with butter.
- 3Cover the saucepan and cook over very low heat, stirring occasionally, until the peas are tender. This will take about 10-15 minutes, depending on the peas. If the peas seem dry, add a tablespoon of water, but the goal is to cook them in the butter without adding much water.
- 4If using older peas, stir in the sugar during the last few minutes of cooking to enhance their sweetness.
- 5Serve the stewed peas hot as a side dish. They are delicious on their own or with plain bread.
