Stewed Green Peas (French Style)

A simple and elegant way to cook green peas, stewed gently in butter for a naturally sweet and flavorful side dish.

Ingredients

  • 2 cups Fresh or Frozen Peas (If using fresh, shell them first.)
  • 2 tablespoons Butter (Unsalted)
  • 1 teaspoon Granulated Sugar (Optional, especially for older peas)
  • 0.25 teaspoon Salt (To taste)
  • 0.125 teaspoon Black Pepper (Freshly ground, to taste)

Instructions

  1. 1If using fresh peas, shell them. If using frozen peas, no preparation is needed.
  2. 2In a medium saucepan or stew-pan, melt the butter over low heat. Add the peas, salt, and pepper. Stir to coat the peas with butter.
  3. 3Cover the saucepan and cook over very low heat, stirring occasionally, until the peas are tender. This will take about 10-15 minutes, depending on the peas. If the peas seem dry, add a tablespoon of water, but the goal is to cook them in the butter without adding much water.
  4. 4If using older peas, stir in the sugar during the last few minutes of cooking to enhance their sweetness.
  5. 5Serve the stewed peas hot as a side dish. They are delicious on their own or with plain bread.
