Stewed Gooseberries

A simple recipe for stewing gooseberries, adjusting the sugar to taste based on ripeness.

Ingredients

  • 1 pound Gooseberries (Young green or ripe, depending on preference)
  • 1 cup Water (Adjust as needed)
  • 0.25 cup Granulated Sugar (Adjust to taste, less for green gooseberries)

Instructions

  1. 1Wash the gooseberries thoroughly and remove the tops and tails with a small knife or scissors.
  2. 2Place the gooseberries in a saucepan with the water. Bring to a simmer over medium heat.
  3. 3Reduce heat to low, cover, and simmer for 15-20 minutes, or until the gooseberries are tender. Stir in the sugar, starting with 1/4 cup, and taste. Add more sugar if needed, depending on the tartness of the gooseberries. Stir until the sugar is dissolved.
  4. 4Remove from heat and let cool slightly before serving. Serve warm or cold.
