Simple Boiled Lentils with Lemon and Butter
A basic recipe for boiled lentils, enhanced with butter and lemon juice. A quick and easy vegetarian side dish or base for other recipes.
Ingredients
- 1 cup Dried lentils (Any type of lentil will work, but brown or green lentils are recommended.)
- 3 cups Water (For soaking and boiling)
- 1 tablespoon Butter (Unsalted butter is preferred.)
- 0.5 Lemon (For juice)
- 0.5 teaspoon Salt (Or to taste)
- 0.25 teaspoon Black pepper (Freshly ground, to taste)
Instructions
- 1Place the lentils in a bowl and cover with plenty of water. Soak overnight (at least 12 hours). Discard any lentils that float to the surface.
- 2Drain the soaked lentils and rinse them thoroughly. Place the lentils in a saucepan and add 3 cups of fresh water. Bring to a boil over medium-high heat, then reduce heat to low, cover, and simmer for 25-30 minutes, or until the lentils are tender.
- 3Drain the lentils well. Return them to the saucepan. Add the butter, lemon juice, salt, and pepper. Stir until the butter is melted and the lentils are well coated. Serve hot.
