Simple Boiled Green Peas

A basic recipe for cooking dried green peas, enhanced with mint, butter, and a touch of sugar.

Ingredients

  • 1 pound Dried Green Peas, Whole
  • 6 cups Water (For soaking and boiling)
  • 4 sprigs Fresh Mint Sprigs
  • 2 tablespoons Butter
  • 0.5 teaspoon Salt (Or to taste)
  • 0.25 teaspoon Black Pepper (Or to taste)
  • 1.5 teaspoons White Powdered Sugar
  • 1 drop Green Vegetable Food Coloring (optional) (Optional, for brighter color)

Instructions

  1. 1Rinse the dried peas in a colander. Place the peas in a large bowl and cover with plenty of cold water. Soak overnight (at least 12 hours). Discard any peas that float to the top.
  2. 2Drain the soaked peas and place them in a large pot. Cover with fresh cold water (about 4 cups). Bring the water to a boil over high heat, then reduce the heat to low, cover, and simmer gently until the peas are tender. This may take 1 to 3 hours, depending on the age and quality of the peas. Check occasionally and add more water if needed to keep the peas covered.
  3. 3Once the peas are tender, add the fresh mint sprigs. Simmer for 1 minute to infuse the flavor. Remove from heat and strain the peas, discarding the mint sprigs.
  4. 4Return the strained peas to the pot. Add the butter, salt, pepper, and sugar. Stir gently to combine. If desired, add a tiny drop of green food coloring for a brighter green color. Serve hot.
