Savoury Fritter Batter

Ingredients

  • 150 grams All-purpose flour
  • 0.25 teaspoon Salt
  • 1 Egg yolk
  • 60 ml Warm water
  • 1 Egg white

Instructions

  1. 1In a medium bowl, whisk together the flour and salt.
  2. 2Add the egg yolk and warm water to the flour mixture. Using a wooden spoon or whisk, stir until the batter is perfectly smooth and resembles thick cream. Ensure there are no lumps.
  3. 3Let the batter rest for at least 30 minutes at room temperature. This allows the gluten to relax, resulting in a lighter fritter.
  4. 4Just before you are ready to use the batter, whip the egg white until stiff peaks form. You can use a whisk or an electric mixer.
  5. 5Gently fold the whipped egg white into the batter until just combined. Be careful not to overmix, as this will deflate the egg white and make the batter less airy.
  6. 6The batter is now ready to use for coating your choice of ingredients before frying. Use immediately for best results.
