Potato Sauté

A simple and flavorful way to use leftover boiled potatoes, sautéed with butter and seasoned with parsley, salt, and pepper.

Ingredients

  • 2 medium Cooked Potatoes, cold (Leftover plain-boiled potatoes, not floury)
  • 2 tablespoons Butter
  • 2 tablespoons Fresh Parsley (Chopped)
  • 0.25 teaspoon Salt (To taste)
  • 0.25 teaspoon Black Pepper (To taste)

Instructions

  1. 1Cut the cold, boiled potatoes into small pieces, about the size of your thumb. The shape doesn't matter.
  2. 2Melt the butter in a frying pan over medium heat. Add the potato pieces and fry gently, turning occasionally, until the edges begin to brown.
  3. 3Pour any remaining butter from the pan over the potatoes. Season with chopped parsley, salt, and pepper. Serve immediately.
