Potato Fritters

These simple potato fritters are made with mashed potatoes, butter, sugar, egg, and a hint of lemon. They are rolled into small balls, floured, and then fried until golden brown.

Ingredients

  • 2 cups Potatoes, cooked and mashed (Use a floury potato variety like Russet or Yukon Gold)
  • 0.25 cup Butter, softened (About 1/2 stick or 57g)
  • 1 Egg, beaten (Large egg)
  • 3 tablespoons Granulated sugar
  • 1 teaspoon Lemon zest (From about 1/2 lemon)
  • 1 tablespoon Heavy cream (Optional, for added richness)
  • 0.5 cup All-purpose flour (For coating)
  • 2 cups Vegetable oil (For frying)

Instructions

  1. 1In a large bowl, combine the mashed potatoes, softened butter, beaten egg, sugar, and lemon zest. Add the cream, if using. Mix well until all ingredients are thoroughly combined.
  2. 2Roll the potato mixture into small balls, about 1-inch in diameter. Place the flour in a shallow dish. Roll each ball in the flour, ensuring it is evenly coated.
  3. 3Heat the vegetable oil in a deep fryer or large pot to 350°F (175°C). Carefully drop the floured potato balls into the hot oil, a few at a time, being careful not to overcrowd the pot. Fry for 3-4 minutes, or until golden brown on all sides. Remove the fritters with a slotted spoon and place them on a paper towel-lined plate to drain excess oil.
  4. 4Serve the potato fritters warm. They can be enjoyed as a snack or dessert.
