Potato Fritters
These simple potato fritters are made with mashed potatoes, butter, sugar, egg, and a hint of lemon. They are rolled into small balls, floured, and then fried until golden brown.
Ingredients
- 2 cups Potatoes, cooked and mashed (Use a floury potato variety like Russet or Yukon Gold)
- 0.25 cup Butter, softened (About 1/2 stick or 57g)
- 1 Egg, beaten (Large egg)
- 3 tablespoons Granulated sugar
- 1 teaspoon Lemon zest (From about 1/2 lemon)
- 1 tablespoon Heavy cream (Optional, for added richness)
- 0.5 cup All-purpose flour (For coating)
- 2 cups Vegetable oil (For frying)
Instructions
- 1In a large bowl, combine the mashed potatoes, softened butter, beaten egg, sugar, and lemon zest. Add the cream, if using. Mix well until all ingredients are thoroughly combined.
- 2Roll the potato mixture into small balls, about 1-inch in diameter. Place the flour in a shallow dish. Roll each ball in the flour, ensuring it is evenly coated.
- 3Heat the vegetable oil in a deep fryer or large pot to 350°F (175°C). Carefully drop the floured potato balls into the hot oil, a few at a time, being careful not to overcrowd the pot. Fry for 3-4 minutes, or until golden brown on all sides. Remove the fritters with a slotted spoon and place them on a paper towel-lined plate to drain excess oil.
