Polish Cheese Fritters (Piroski Sernikis)
These Polish cheese fritters, known as Piroski Sernikis, are a delightful treat made from a simple cheese dough, lightly fried until golden brown. A perfect snack or dessert.
Ingredients
- 1 pound Cream cheese (Original recipe calls for 2 pounds, which is excessive for a modern portion.)
- 0.375 pound Fine bread crumbs (Rubbed through a wire sieve)
- 3 Eggs (Well beaten)
- 2 tablespoons Cream or milk (Add a little)
- 2 ounces Washed currants (Washed grocer's currants)
- 0.5 ounce Sugar (About 1 tablespoon)
- 0.25 Nutmeg (Half a grated nutmeg)
- 0.5 cup All-purpose flour (As needed to form a dough)
- 2 tablespoons Butter (For frying)
Instructions
- 1In a large bowl, combine the cream cheese, fine bread crumbs, and beaten eggs. Mix well.
- 2Add the cream or milk, washed currants, sugar, and grated nutmeg to the cheese mixture. Mix thoroughly.
- 3Gradually add flour to the mixture until it forms a paste that can be rolled into small balls. The balls should be about the size of a walnut.
- 4Flour your hands, and then flatten each ball into a small cake.
- 5Heat butter in a frying pan over medium heat. Fry the cheese cakes until they are a nice golden brown on both sides.
