Polenta

A simple recipe for making polenta from ground cornmeal.

Ingredients

  • 1 cup Yellow Cornmeal (Polenta) (Use coarse or medium ground cornmeal.)
  • 4 cups Water
  • 0.5 teaspoon Salt
  • 2 tablespoons Butter (optional)
  • 0.25 cup Grated Parmesan Cheese (optional)

Instructions

  1. 1In a medium saucepan, bring 4 cups of water to a boil. Add salt.
  2. 2Slowly whisk in the cornmeal, making sure to avoid lumps. Reduce heat to low.
  3. 3Simmer, stirring frequently, for about 25-30 minutes, or until the polenta is thick and creamy and pulls away from the sides of the pan. The cooking time will vary depending on the grind of the cornmeal.
  4. 4Remove from heat and stir in butter and Parmesan cheese, if desired. Serve hot.
