- 1In a large bowl, combine water and salt. Submerge the artichokes upside down in the salted water and let them soak to remove any insects. Soak for at least 15 minutes.

- 3In a large saucepan, bring water to a boil. The water should be deep enough to nearly cover the artichokes. Add salt, pepper, savory herbs, and butter (if using). Place the artichokes in the boiling water, leaving the tips of the leaves exposed if possible. Reduce heat to medium and boil until the artichokes are tender. This will take approximately 30-45 minutes, depending on the size of the artichokes. You can test for doneness by piercing the base with a fork; it should be easily pierced.
