Pineapple Fritters

A simple dessert of pineapple slices dipped in batter and fried until golden brown.

Ingredients

  • 1 medium Fresh pineapple or canned pineapple slices (If using fresh pineapple, peel, core, and slice into 1/2-inch thick rings or strips.)
  • 1 cup Powdered sugar (For dusting)
  • 1 cup All-purpose flour (For the batter)
  • 2 tablespoons Granulated sugar (For the batter)
  • 1 teaspoon Baking powder (For the batter)
  • 0.25 teaspoon Salt (For the batter)
  • 0.75 cup Milk (For the batter)
  • 1 Egg (For the batter)
  • 0.5 teaspoon Vanilla extract (For the batter)
  • 2 cups Vegetable oil (For frying)
  • 1 tablespoon Maraschino liqueur (optional) (For flavoring the batter)

Instructions

  1. 1If using fresh pineapple, peel, core, and slice into 1/2-inch thick rings or strips, about 3 inches long and 1 inch wide. If using canned pineapple, drain well.
  2. 2In a medium bowl, whisk together the flour, sugar, baking powder, and salt. In a separate bowl, whisk together the milk, egg, and vanilla extract. If using, add the maraschino liqueur. Pour the wet ingredients into the dry ingredients and whisk until just combined. Do not overmix.
  3. 3In a large, heavy-bottomed pot or deep fryer, heat the vegetable oil to 350°F (175°C).
  4. 4Dust the pineapple slices with powdered sugar. Dip each pineapple slice into the batter, ensuring it is fully coated. Carefully place the battered pineapple slices into the hot oil, a few at a time, being careful not to overcrowd the pot. Fry for 2-3 minutes per side, or until golden brown. Remove the fritters from the oil and place them on a wire rack lined with paper towels to drain excess oil.
  5. 5Serve the pineapple fritters immediately, dusted with additional powdered sugar if desired.
