Mushrooms a la Provencale

A simple and flavorful mushroom dish marinated in garlic and herbs, then stewed and served with toasted bread.

Ingredients

  • 1 pound Mushrooms (Cremini or white button mushrooms work well)
  • 3 tablespoons Olive oil
  • 2 cloves Garlic (Minced)
  • 1 tablespoon Fresh parsley (Chopped)
  • 1 teaspoon Lemon juice (Freshly squeezed)
  • 0.25 teaspoon Salt (To taste)
  • 0.25 teaspoon Black pepper (Freshly ground, to taste)
  • 2 slices Bread (For toasting or frying)

Instructions

  1. 1Wash the mushrooms thoroughly. Peel them if desired (though not necessary for all types). Dry them well with a clean towel.
  2. 2In a bowl, combine 2 tablespoons of olive oil, minced garlic, salt, and pepper. Add the mushrooms and toss to coat. Let marinate for at least 10 minutes.
  3. 3Heat the remaining 1 tablespoon of olive oil in a pan over medium-high heat. Add the marinated mushrooms and cook, stirring frequently, until they are tender and have released their juices, about 10 minutes. Stir in the chopped parsley.
  4. 4Squeeze lemon juice over the mushrooms. Serve hot in a dish, surrounded with fried or toasted bread.
