Modern Welsh Rarebit

A modernized version of Welsh Rarebit, a savory cheese sauce served over toast.

Ingredients

  • 2 Bread slices (Thick slices, suitable for toasting)
  • 4 oz Sharp cheddar cheese, grated
  • 2 tbsp Butter
  • 1 tsp Worcestershire sauce
  • 1 tbsp Burton ale (or other dark ale) (Optional)
  • 2 tbsp Milk (Optional, for smoother sauce)
  • 1 tsp Dijon mustard (Optional)

Instructions

  1. 1Toast the bread slices until golden brown and crisp. Set aside.
  2. 2In a saucepan over low heat, melt the butter. Add the grated cheddar cheese, Worcestershire sauce, Dijon mustard (if using), and milk (if using). Stir constantly until the cheese is completely melted and the sauce is smooth. If using ale, stir it in at the end.
  3. 3Pour the melted cheese sauce over the toasted bread slices. Serve immediately.
