Modern Turnip Greens with Egg Mimosa
A modern take on turnip greens, mimicking the flavor and presentation of spinach and eggs.
Ingredients
- 1 pound Fresh Turnip Greens (Choose young, tender greens.)
- 6 cups Water (For boiling the greens)
- 1 teaspoon Salt (Or to taste)
- 2 tablespoons Butter (Unsalted)
- 2 tablespoons All-Purpose Flour
- 1 cup Vegetable Stock
- 1 cup Milk (Whole milk recommended)
- 0.25 teaspoon Black Pepper (Freshly ground)
- 4 large Hard-Boiled Eggs
- 0.5 teaspoon Spinach Extract (optional) (For enhanced color)
Instructions
- 1Wash the turnip greens thoroughly under cold running water to remove any dirt or grit. Roughly chop the greens.
- 2Bring the water to a rolling boil in a large pot. Add the salt. Add the chopped turnip greens and boil for about 15 minutes, or until they are tender.
- 3Drain the turnip greens thoroughly in a colander or strainer. Once cooled slightly, chop the greens finely with a knife.
- 4Melt the butter in a saucepan over medium heat. Add the flour and stir constantly for 1-2 minutes until a smooth paste forms (a roux). Be careful not to burn the roux.
- 5Gradually whisk in the vegetable stock, ensuring there are no lumps. Then, add the milk and stir until the sauce is smooth and slightly thickened.
- 6Add the chopped turnip greens to the sauce and stir to combine. Season with salt and pepper to taste. If desired, add spinach extract to enhance the green color.
- 7Grate the hard-boiled eggs using a fine grater or microplane. This will create a fluffy, mimosa-like topping.
- 8Serve the turnip greens hot, topped with the grated hard-boiled egg mimosa.
