Instructions
- 1Heat the tinned spinach in its tin over low heat, or in a saucepan, until very hot. Be careful not to let it burn. Alternatively, microwave the spinach in a microwave-safe bowl for 2-3 minutes, or until heated through.
- 2Place the eggs in a saucepan and cover with cold water. Bring to a boil over medium-high heat. Once boiling, reduce the heat to low and simmer for 8 minutes for hard-boiled eggs. Drain the hot water and run cold water over the eggs to stop the cooking process. Peel the eggs.
- 3Turn the hot spinach out onto a serving dish. Cut the hard-boiled eggs in half and arrange them on top of the spinach. Season with salt and pepper to taste. If desired, add a teaspoon of vinegar to each serving.
