Modern Scotch Kale
A simple and nutritious way to prepare Scotch kale, also known as curly greens, with a focus on preserving its vibrant color and enhancing its flavor.
Ingredients
- 1 pound Scotch kale (curly kale) (Also known as curly greens)
- 6 cups Water (For boiling)
- 1 teaspoon Salt (For boiling water)
- 2 tablespoons Butter (Unsalted)
- 0.25 teaspoon Black pepper (Freshly ground)
- 0.25 teaspoon Salt (To taste)
Instructions
- 1Wash the Scotch kale very carefully under cold running water to remove any dirt or grit. Remove tough stems and chop the leaves into bite-sized pieces.
- 2Bring the water to a fast boil in a large saucepan. Add 1 teaspoon of salt. Throw the chopped kale into the boiling salted water. Ensure the saucepan remains uncovered to preserve the dark green color.
- 3Boil the kale for about 20 minutes, or until it is tender. Test for doneness by piercing a piece of kale with a fork; it should be easily pierced.
- 4Once the kale is tender, strain it thoroughly using a colander or sieve to remove all excess water. Return the strained kale to the saucepan. Add butter, pepper, and salt to taste. Warm over low heat, stirring gently, until the butter is melted and the kale is evenly coated.
- 5Serve the Scotch kale immediately as a side dish.
