Modern French Bean Salad

A refreshing and simple French bean salad with a hint of garlic and a balanced vinaigrette.

Ingredients

  • 1 pound French beans, trimmed
  • 2 tablespoons Fresh parsley, chopped
  • 1 clove Garlic clove
  • 3 tablespoons Extra virgin olive oil
  • 2 tablespoons Red wine vinegar
  • 0.5 teaspoon Salt (Or to taste)
  • 0.25 teaspoon Black pepper, freshly ground (Or to taste)

Instructions

  1. 1Bring a pot of salted water to a boil. Add the French beans and cook until tender-crisp, about 5-7 minutes. Drain immediately and rinse with cold water to stop the cooking process. Pat dry.
  2. 2Rub the inside of a salad bowl with the cut side of the garlic clove. Discard the garlic clove.
  3. 3In a small bowl, whisk together the olive oil, red wine vinegar, salt, and pepper.
  4. 4In the prepared salad bowl, combine the cooked French beans and chopped parsley. Pour the vinaigrette over the beans and toss gently to coat. Serve immediately or chill for later.
