Mashed Artichokes
A simple and elegant side dish made from mashed artichoke hearts, enhanced with butter and cream.
Ingredients
- 2 large Large artichokes (Older artichokes are preferred, but fresh ones work too.)
- 2 tablespoons Unsalted butter
- 2 tablespoons Heavy cream
- 1 pinch Salt (To taste)
- 1 pinch Black pepper (To taste)
Instructions
- 1Cook the artichokes. Trim the artichokes by cutting off the stem and the top inch. Remove any tough outer leaves. Steam or boil the artichokes until the leaves can be easily pulled off, about 15-20 minutes.
- 2Remove the leaves and the choke (the fuzzy part in the center). Only the heart is used for this recipe.
- 3Rub the artichoke hearts through a wire sieve to remove any fibrous strings. Alternatively, use a food processor or potato masher for a coarser texture.
- 4In a bowl, combine the mashed artichoke hearts with butter and cream. Season with salt and pepper to taste. Mix well until smooth and creamy.
- 5Serve immediately as a side dish.
