Indian Sandwiches with Curried Eggs

Hard-boiled egg sandwiches with a touch of curry powder, perfect for a flavorful snack or light meal.

Ingredients

  • 6 Large eggs (For hard-boiling)
  • 3 tablespoons Mayonnaise (Good quality)
  • 1 teaspoon Curry powder (Adjust to taste)
  • 0.25 teaspoon Salt (Or to taste)
  • 0.125 teaspoon Black pepper (Freshly ground, or to taste)
  • 8 Bread slices (Your favorite type)
  • 2 tablespoons Butter (Softened, for spreading)

Instructions

  1. 1Place the eggs in a saucepan and cover with cold water. Bring to a boil over medium-high heat. Once boiling, remove from heat, cover, and let sit for 10 minutes. Drain the hot water and rinse the eggs with cold water until they are cool enough to handle.
  2. 2Gently tap the eggs on a hard surface to crack the shells. Peel the eggs under cold running water. Chop the peeled eggs into small pieces.
  3. 3In a bowl, combine the chopped eggs, mayonnaise, curry powder, salt, and pepper. Mix well until everything is evenly combined.
  4. 4Butter each slice of bread. Spread the curried egg salad evenly over four slices of bread. Top with the remaining bread slices to form sandwiches. Cut in half or quarters, if desired.
