Hop Salad
A simple salad made from young hop shoots, dressed with either oil and vinegar or vinegar and sugar.
Ingredients
- 1 pound Young hop shoots (Picked when quite young, before they get leafy)
- 6 cups Water (For boiling)
- 2 tablespoons Olive oil (For dressing (English style))
- 1 tablespoon Vinegar (For dressing (English or German style))
- 1 teaspoon Sugar (For dressing (German style))
- 0.25 teaspoon Salt (To taste)
- 0.25 teaspoon Black pepper (To taste)
Instructions
- 1Wash the young hop shoots thoroughly under cold running water.
- 2Place the washed hop shoots in a pot with water. Bring to a boil and then reduce heat to simmer. Boil until nearly tender, about 10-15 minutes.
- 3Drain the boiled hop shoots in a colander.
- 4In a bowl, whisk together olive oil and vinegar. Add salt and pepper to taste. Pour the dressing over the drained hop shoots and toss gently to combine. Serve immediately or chill for later.
