Haricot Bean Salad

A simple and refreshing salad made with haricot beans, parsley, garlic, oil, vinegar, salt, and pepper. Can be made with dried or canned beans.

Ingredients

  • 1 cup Dried Haricot Beans (Or 1 (15-ounce) can haricot beans, drained and rinsed)
  • 0.25 cup Fresh Parsley (Chopped)
  • 1 clove Garlic (Minced)
  • 3 tablespoons Olive Oil
  • 0.25 teaspoon Salt (To taste)
  • 0.25 teaspoon Black Pepper (Freshly ground, to taste)
  • 2 tablespoons Vinegar (White wine vinegar or red wine vinegar)

Instructions

  1. 1If using dried haricot beans, soak them in cold water for at least 4 hours or overnight. Drain and rinse the beans. Place them in a pot, cover with fresh water, and bring to a boil. Reduce heat and simmer for 1-1.5 hours, or until the beans are tender. Drain and let cool slightly.
  2. 2In a small bowl, whisk together the olive oil, salt, and pepper. Add the vinegar and whisk again until emulsified.
  3. 3In a large bowl, combine the cooked (or canned) haricot beans, chopped parsley, and minced garlic. Pour the dressing over the salad and toss gently to combine. Adjust seasoning to taste.
  4. 4Serve the haricot bean salad immediately or chill for later. The flavors will meld together as it sits.
