Haricot Bean Salad
A simple and refreshing salad made with haricot beans, parsley, garlic, oil, vinegar, salt, and pepper. Can be made with dried or canned beans.
Ingredients
- 1 cup Dried Haricot Beans (Or 1 (15-ounce) can haricot beans, drained and rinsed)
- 0.25 cup Fresh Parsley (Chopped)
- 1 clove Garlic (Minced)
- 3 tablespoons Olive Oil
- 0.25 teaspoon Salt (To taste)
- 0.25 teaspoon Black Pepper (Freshly ground, to taste)
- 2 tablespoons Vinegar (White wine vinegar or red wine vinegar)
Instructions
- 1If using dried haricot beans, soak them in cold water for at least 4 hours or overnight. Drain and rinse the beans. Place them in a pot, cover with fresh water, and bring to a boil. Reduce heat and simmer for 1-1.5 hours, or until the beans are tender. Drain and let cool slightly.
- 2In a small bowl, whisk together the olive oil, salt, and pepper. Add the vinegar and whisk again until emulsified.
- 3In a large bowl, combine the cooked (or canned) haricot beans, chopped parsley, and minced garlic. Pour the dressing over the salad and toss gently to combine. Adjust seasoning to taste.
- 4Serve the haricot bean salad immediately or chill for later. The flavors will meld together as it sits.
