Fried Parsnips
A simple recipe for fried parsnips, coated in breadcrumbs and fried until golden brown.
Ingredients
- 2 large Parsnips (Full-grown)
- 1 teaspoon Salt (To taste)
- 0.5 teaspoon Black pepper (To taste)
- 2 Eggs (Beaten)
- 1 cup Breadcrumbs (Plain or seasoned)
- 0.5 cup Vegetable oil (For frying)
Instructions
- 1Peel the parsnips and cut them into roughly equal-sized pieces. Place them in a pot of boiling water and cook until they are tender, about 15-20 minutes. Check for doneness by piercing with a fork; it should slide in easily.
- 2Drain the parsnips and let them cool slightly. Once cool enough to handle, cut them into slices about 1/4 inch thick. Season the slices with salt and pepper.
- 3Dip each parsnip slice into the beaten egg, then dredge it in the breadcrumbs, ensuring it's fully coated. Repeat for all slices.
- 4Heat the vegetable oil in a large skillet over medium-high heat until it's smoking hot. Carefully place the breaded parsnip slices into the hot oil, ensuring not to overcrowd the pan. Fry for 2-3 minutes per side, or until they are a nice golden brown color. Remove the fried parsnips from the skillet and place them on a paper towel-lined plate to drain excess oil.
- 5Serve the fried parsnips immediately while they are still hot and crispy.
