Fried Parsnips

A simple recipe for fried parsnips, coated in breadcrumbs and fried until golden brown.

Ingredients

  • 2 large Parsnips (Full-grown)
  • 1 teaspoon Salt (To taste)
  • 0.5 teaspoon Black pepper (To taste)
  • 2 Eggs (Beaten)
  • 1 cup Breadcrumbs (Plain or seasoned)
  • 0.5 cup Vegetable oil (For frying)

Instructions

  1. 1Peel the parsnips and cut them into roughly equal-sized pieces. Place them in a pot of boiling water and cook until they are tender, about 15-20 minutes. Check for doneness by piercing with a fork; it should slide in easily.
  2. 2Drain the parsnips and let them cool slightly. Once cool enough to handle, cut them into slices about 1/4 inch thick. Season the slices with salt and pepper.
  3. 3Dip each parsnip slice into the beaten egg, then dredge it in the breadcrumbs, ensuring it's fully coated. Repeat for all slices.
  4. 4Heat the vegetable oil in a large skillet over medium-high heat until it's smoking hot. Carefully place the breaded parsnip slices into the hot oil, ensuring not to overcrowd the pan. Fry for 2-3 minutes per side, or until they are a nice golden brown color. Remove the fried parsnips from the skillet and place them on a paper towel-lined plate to drain excess oil.
  5. 5Serve the fried parsnips immediately while they are still hot and crispy.
