Fried Jerusalem Artichokes

Thinly sliced Jerusalem artichokes, fried until golden brown and seasoned. A simple and delicious vegetarian side dish.

Ingredients

  • 1 pound Jerusalem Artichokes (About 1 pound, peeled)
  • 3 cups Vegetable Oil (For frying)
  • 0.5 teaspoon Salt (To taste)
  • 0.25 teaspoon Black Pepper (Freshly ground, to taste)
  • 1 wedge Lemon (For serving)
  • 4 slices Brown Bread (Thinly sliced, optional)
  • 2 tablespoons Butter (Softened, optional)

Instructions

  1. 1Peel the Jerusalem artichokes and slice them very thinly, about 1/8 inch thick.
  2. 2Pour the vegetable oil into a deep fryer or a large, heavy-bottomed pot. Heat the oil over medium-high heat until it reaches a temperature of 350°F (175°C). A frying basket should be placed in the oil.
  3. 3Carefully add the sliced Jerusalem artichokes to the hot oil in batches, ensuring not to overcrowd the frying basket. Fry for 2-3 minutes, or until they are a bright golden-brown color.
  4. 4Lift the frying basket out of the oil and shake it gently to remove excess oil. Immediately season the fried artichokes with salt and black pepper. Serve very hot with a wedge of lemon and, optionally, thin brown bread-and-butter.
