Cold Mushroom Pie

A savory mushroom and potato pie, baked, cooled, and then topped with puff pastry for a delicious cold dish.

Ingredients

  • 1 pound Mushrooms (Mixed variety preferred)
  • 1 pound Potatoes (Peeled and diced)
  • 1 cup Mushroom Essence (Strong mushroom broth or concentrate)
  • 2 tablespoons Fresh Parsley (Chopped)
  • 0.5 teaspoon Black Pepper (Freshly ground)
  • 0.5 teaspoon Salt (To taste)
  • 2 tablespoons Cornstarch (For thickening)
  • 1 sheet Puff Pastry (Store-bought or homemade)
  • 2 tablespoons Butter (For sauteing)
  • 0.5 medium Onion (Finely chopped)

Instructions

  1. 1Clean and slice the mushrooms. Peel and dice the potatoes into small, even pieces. Finely chop the onion. Chop the parsley.
  2. 2Preheat oven to 375°F (190°C). In a large skillet, melt butter over medium heat. Add chopped onion and sauté until softened, about 5 minutes. Add the mushrooms and potatoes to the skillet and cook until slightly softened, about 10 minutes. Season with salt and pepper. Stir in the chopped parsley. Transfer the mixture to a pie dish.
  3. 3Pour the mushroom essence over the mushroom and potato mixture in the pie dish. Bake in the preheated oven for 20 minutes, or until the potatoes are perfectly tender.
  4. 4Remove the pie dish from the oven. Carefully strain off the juice or gravy from the pie dish into a saucepan. In a small bowl, whisk the cornstarch with a little cold water to form a slurry. Add the cornstarch slurry to the saucepan with the gravy and cook over medium heat, stirring constantly, until the gravy thickens, about 2-3 minutes. Pour the thickened gravy back into the pie dish and mix well with the mushroom and potato mixture. Pile the mixture up in the middle of the dish so that the center is raised above the edge.
  5. 5Let the pie filling cool completely to room temperature. This may take 1-2 hours.
  6. 6Preheat oven to 400°F (200°C). Cover the cooled pie filling with a sheet of puff pastry. Crimp the edges to seal. Bake in the preheated oven for 20-25 minutes, or until the pastry is golden brown and cooked through.
  7. 7Remove the pie from the oven and let it cool completely before cutting into slices and serving cold.
