Cheese Straws

Savory cheese straws made with Parmesan cheese, breadcrumbs, butter, and flour, seasoned with cayenne and nutmeg.

Ingredients

  • 1 cup Grated Parmesan cheese
  • 1 cup Grated breadcrumbs (Made from stale bread, finely grated)
  • 1 cup Butter, cold and cubed
  • 1 cup All-purpose flour
  • 0.25 teaspoon Cayenne pepper (Adjust to taste)
  • 0.125 teaspoon Grated nutmeg
  • 1 tablespoon Cold water (Or as needed)

Instructions

  1. 1In a large bowl, combine the grated Parmesan cheese, grated breadcrumbs, flour, cayenne pepper, and grated nutmeg.
  2. 2Add the cold, cubed butter to the dry ingredients. Use a pastry blender or your fingertips to cut the butter into the flour mixture until it resembles coarse crumbs.
  3. 3Add cold water, one tablespoon at a time, until the dough comes together into a thick paste. Be careful not to overwork the dough.
  4. 4On a lightly floured surface, roll the dough out very thin (about 1/8 inch thick). Cut the dough into thin strips, about 1/4 inch wide and 4 inches long.
  5. 5Preheat oven to 400°F (200°C). Place the cheese straws on a baking sheet lined with parchment paper. Bake for 8-10 minutes, or until golden brown. Watch carefully, as they can burn quickly.
  6. 6Let the cheese straws cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely. Serve immediately or store in an airtight container.
