Broiled Artichokes

A simple recipe for broiled artichokes, filled with a savory breadcrumb mixture.

Ingredients

  • 2 medium Artichokes
  • 2 tablespoons Fresh Parsley (chopped)
  • 1 cup Breadcrumbs (light-colored)
  • 3 tablespoons Olive Oil (extra virgin)
  • 0.25 teaspoon Salt (or to taste)
  • 0.125 teaspoon Black Pepper (freshly ground, or to taste)

Instructions

  1. 1Bring a large pot of salted water to a boil. Add the artichokes and parboil them for about 10-15 minutes, or until the outer leaves can be easily pulled off. Remove from the water and let cool slightly.
  2. 2Once the artichokes are cool enough to handle, carefully spread the leaves apart and use a spoon or knife to remove the fuzzy choke from the center. Discard the choke.
  3. 3In a small bowl, combine the chopped parsley, breadcrumbs, olive oil, salt, and pepper. Mix well until the breadcrumbs are moistened.
  4. 4Spoon the breadcrumb mixture into the hollow centers of the artichokes, pressing gently to pack it in.
  5. 5Preheat your broiler. Place the filled artichokes on a baking sheet and broil for 10-15 minutes, or until the breadcrumbs are golden brown and the artichokes are heated through. Watch carefully to prevent burning.
  6. 6Serve the broiled artichokes immediately while they are hot.
