Broiled Artichokes
A simple recipe for broiled artichokes, filled with a savory breadcrumb mixture.
Ingredients
- 2 medium Artichokes
- 2 tablespoons Fresh Parsley (chopped)
- 1 cup Breadcrumbs (light-colored)
- 3 tablespoons Olive Oil (extra virgin)
- 0.25 teaspoon Salt (or to taste)
- 0.125 teaspoon Black Pepper (freshly ground, or to taste)
Instructions
- 1Bring a large pot of salted water to a boil. Add the artichokes and parboil them for about 10-15 minutes, or until the outer leaves can be easily pulled off. Remove from the water and let cool slightly.
- 2Once the artichokes are cool enough to handle, carefully spread the leaves apart and use a spoon or knife to remove the fuzzy choke from the center. Discard the choke.
- 3In a small bowl, combine the chopped parsley, breadcrumbs, olive oil, salt, and pepper. Mix well until the breadcrumbs are moistened.
- 4Spoon the breadcrumb mixture into the hollow centers of the artichokes, pressing gently to pack it in.
- 5Preheat your broiler. Place the filled artichokes on a baking sheet and broil for 10-15 minutes, or until the breadcrumbs are golden brown and the artichokes are heated through. Watch carefully to prevent burning.
- 6Serve the broiled artichokes immediately while they are hot.
